Prawn with Lime and Pepper Aioli Sandwiches
Makes 16
   16 medium cooked king prawns (720g)
   30g butter
   8 slices white bread
   1 cup shredded baby cos (Romaine) lettuce
Lime and Pepper Aioli
   ½ cup whole egg mayonnaise
   1 small clove garlic, crushed
   ½ teaspoon finely grated lime rind
   2 teaspoons lime juice
   ¼ teaspoon cracked black pepper

To make lime and pepper aioli: Combine ingredients in a medium bowl. Season to taste.
   Shell and devein prawns, halve lengthways. Stir prawns into aioli. Season to taste.
   Spread butter over bread slices; top half the slices with prawn mixture and shredded lettuce then remaining bread.
   Discard crusts, cut each sandwich into four triangles.
